Fish products need different processing requirements than meat products and the Kerres fish smoke house models are ideally suited to do just this. Salmon, trout, herring and mackerel fillets for example have to be placed in a lying position on grates or plates and Kerres have adapted their smoke house with a smoking system which meets these special requirements, they call it the fish smoker system. This system passes the smoke horizontally over and under the products in their lying positions and enables the smoke house to provide a consistent treatment atmosphere inside the chamber which in turn ensures even drying results over the entire batch of product, with maximum yields. The meat smoke house model JS 2850 uses a standard vertical circulation system to pass the smoke vertically up and down the chamber passing the hanging meat or poultry. Both the fish smoke house and meat smoke house feature something called Jet Smoke technology. Jet Smoke technology is simply a smoke circulation system that reduces smoke emissions to the stating levels - in fact below them! The smoke in the smoke house is constantly re-generated with the advantage that virtually no fresh air enters the system and there is virtually no exhaust gas. This method ensures a particularly environmental friendly and economical operation of the smoke house in all processes.
