Sous Vide which translates literally from the French term 'under vacuum' was developed in France during the early 1970's by a chef and university food scientist to cook the perfect foie gras. The product is vacuum packed and then slow cooked at a precise temperature, resulting in a gentle cooking process where the products remain tender in texture with enhanced intense flavours.
