Benefits of integrated cooling in a meat tumbler: 

  • Costs of cooling a whole room uses a massive amount of kW/h compared to a tumbler that has cooling directly in the jacket
  • Efficiency of a tumbler in a fridge / cooled room, is much lower than a tumbler with cooling directly in the jacket - during the cycle meat generates heat and in order to keep the temp down, you have to pause (typically 10min turn, 5 min pause). In a machine with cooling the drum is much colder so the product temp stays low and you can eliminate the pause. This means that daily production on a cooling machine is equivalent to a none cooling machine with a much higher capacity. This depends on cycle time, but a 2000 litre cooling tumbler might be equivalent to a 3000 litre tumbler without cooling.
  • Placing a non-cooling tumbler in a fridge creates more reliability issues. Vacuum pumps dont like the cold, particularly when first starting up. Electrics like control panel can have more issues with condensation etc.

The Nowicki MA 500 PSCH vacuum tumbler with cooling is designed for wet and dry marination. The vacuum tumbler tenderises and softens the meat in vacuum during the production of ham, shoulder, sirloin, bacon and soft pieces of chicken. 

The cooling system on vacuum tumblers has many benefits in production:

  • high product quality, regardless of the temperature conditions in the curing plant
  • optimal binding of proteins
  • improves the micro-biological quality of the product

The Nowicki MA500 PSCH vacuum tumbler is manufactured using the latest CE directives and highest of hygiene levels, it is made from acid resistant stainless steel of grade 304 (AISI). The properly shaped paddles inside the drum, wide range of vacuum levels, rotations, work period and system of chilling the drum casing enables the vacuum tumbler to achieve the required parameters of the tenderised meat. This increases the outputs of the finished product, achieves optimum binding of proteins and reduces the mixing time to a minimum. All this without a negative effect on appearance of the fresh meat.

The Nowicki MA500 PSCH vacuum tumbler has a triple isolated coat cooling jacket with glycol cooling agent, the cooling unit is placed away from the tumbler with the agent FREON 449A, giving the vacuum tumbler the ability to work with temperatures up to 44'C, and allows to chill the tumbler down to work at 1'C. The vacuum tumbler is fitted with a temperature sensor that is then controlled via the touch screen control panel. 

The vacuum tumbler's drum has specially designed paddles inside that allows for gentle, cosistent tumbling and marinating. The drums also has a polished interior giving the best results for chicken and larger pieces of meat. The vacuum tumbler drum is driven by using a SEW / NORD gearbox and has adjustable speed via the touch panel control. 

The Nowicki MA500 PSCH vacuum tumbler is fitted with a Busch vacuum pump, with the suction being attached to the lid that covers the front opening. The Busch vacuum pump is protected from flooding by two external vacuum traps. 

The vacuum tumbler is controlled using a 5.7" touch screen control panel and PLC, which controls speed of drum, vacuum level, timers and temperature, as well as monitoring all of the parameters, deferred start time and pulsating vacuum. The touch panel is protected by a clear plastic shield and is IP67 rated. The touch screen control panel has the ability to store up to 20 different programs with each program having up to 12 different steps. This gives the operator the ability to repeat exactly the same process time and time again. 

The Nowicki MA500 PSCH vacuum tumbler with cooling is loaded easily via the front opening hole, this can be done by hand or by an automated loading system. The loading systems from Nowicki can be used on individual tumblers or a complete line, lifting 200 litre toten bins and dropping the product down a chute and into the vacuum tumbler. There are various versions of loading system, to suit all companies. Unloading is done simply by reversing the drum rotation and allowing the specially designed paddles inside to gently push the product back out of the opening hole at the front of the vacuum tumbler.
