Application
The Nowicki KN200 V bowl chopper is manufactured for the general production of smoked, steamed, raw sausages and vast possibilities in production of superb fine grain emulsion from crude materials like chicken skin and tendons, very fine fresh and/or pre-cut frozen meat granulating, perfect for cutting / doing emulstion in Vegetarian industry, bakery, fishery or dairy produce. The Nowicki KN200 V bowl chopper is fitted with Busch vacuum pumnp to allow cutting in a vacuum environment up to 90%.
Why use vacuum when cutting?
Vacuum bowl choppers give better protein digestions, better binding in the meat / product, an optimised product shelf life due to reduced oxidation in the product and a much longer product colour retention.
Standard equipment
The Nowicki KN200 V bowl chopper is made from the highest quality, acid resistant stainless steel and according to all current CE directives. The way that Nowicki has designed the bowl chopper means the distance between knife and bowl is as little as possible allowing for perfect 'cutting in the air' results. A narrow cutting chamber in the bowl chopper creates uniform cutting in the whole batch. The Nowicki bowl chopper has self - supporting solid stainless steel construction covers, stainless steel cutter head cover and knife shaft. The weight of the bowl chopper combined with build quality and adjustable stainless steel feet means the bowl chopper creates little to no vibrations and therefore prolongs the life the two bearings in the knife shaft. With the option of adding hydraulic tote bins loading and hydraulic unloading disc gives the operator ultimate control. Loading and unloading of the bowl chopper is controlled by the use of joysticks fitted next to the touch panel plc, these also control the knives and bowl covers. The Nowicki KN200 V bowl chopper is extremely easy to keep clean with all covers opening up and giving access to all areas in contact with food. The bowl chopper has a AC drive motor as standard with a lower acid resistant shiled for motor protection. A microprocessor control unit with up to 40 programs is used to control the bowl chopper and this can be adjusted to best fit the operators position. The bowl choppers control panel is user friendly and smoothly controls all the parameters: level of vacuum, speed of knife shaft, speed of bowl etc. The bowl chopper can be placed into manual or Semi auto work mode. The bowl choppers comes with 2 Sets of knives (shapes to be choose by customer – depending on processed meat), a central lubrication system and also with a diagnostic system. The bowl chopper is fitted with world re-known Busch vacuum pump for reliable vacuum when cutting everytime. The cutter head is removed and secured into place quickly using the semi-automatic key, and the bowl chopper has a connection cable covered with stainless steel tube (5m) for additional safety. The electric cabinet for the bowl chopper is separately located for a better prevention before flooding the electric components, this is usually fixed to a wall away from the bowl chopper.
Control system
The bowl chopper has a HMI as Touch panel with joystics to control the covers / loader/ unloader if chosen as options. This control can utilize up to 40 programs – possibility to determine the program according to: time of process, number of bowl, temperature of batch.
I can be put into manual work mode, where the operator chooses when to move into different steps of bowl cutting. The bowl chopper has very smooth control regulation of rotation: in cutting speed: 210-4800rpm, in mixing speed: 100-300rpm, in bowl speed: 2-20rpm
as well as stuffing spreader speed: max. 140rpm. The bowl chopper's control panel also gives the operator control of stuffing temperature (continuous), automatic control for the exact dose of water (optional extra) and has a machine failure diagnostics system.
Additional functions allow for vacuum programming and control and a communicative work control system.
